Italy

How can one small country produce so much? Italian cuisine offers a whole world of ingredients – fresh seafood, seasonal veggies, cured meats, beautiful cheeses, savory herbs – prepared in ways from simple to elaborate. Some recipes are thousands of years old and have changed very little over the course of time; others were born in the Renaissance or after the discovery of the New World, when a wealth of new foodstuffs like tomatoes, beans, peppers, and corn reached European shores. Of course, when we talk about Italian food, we’re really talking about regional cuisines, comprising many styles, not just one -- from big Bolognese stews to simple Venetian fish dishes. Italy’s regional dishes are sources of great local pride in the places where they were developed. Geography played a big part in how they developed. Cows on pastures in the north produced dairy foods like butter and cheeses. In the arid south, fertile fields give way to rocky hills where olive trees and grape vines dominated.

This cake was really moist and delicious. It was a extra sweet, which was good for me because I made it for a sweet tooth. Thanks!

Chocolate Frosting I

Reviewed on Oct. 6, 2008 by Le12ahw
As with other reviewers, i found this recipe to be much too sweet, with not enough of a chocolate flavor. I am rating the recipe as it is written, not according to the changes suggested by other reviewers. Still, a solid, easy recipe for the future, with the other reviewers' suggestions. Thanks!

Chocolate Caramel Nut Cheesecake

Reviewed on Oct. 6, 2008 by Le12ahw
I added an extra half package of cream cheese and baked the cheesecake an extra 15 minutes and it still was not enough - maybe my oven is not as hot as the average, however I am giving this a 4 instead of a 5 because although good - it was not great. I think the broken up pieces of candy bar would have been better if they were smooth instead of in pieces. Very good, very rich recipe. easy to make as well. Thanks!
