Shredded Beef Enchiladas

made some changes like adding my own red enchilada sauce but what i enjoyed most was the sour cream mixture. so easy and yet so good i used monterey jack instead of cheddar because i'm partial to jack but otherwise these are fantastic

Classy Green Bean Casserole

This was great. Quick and simple. I did make a slight change, though. I used coarsely processed slightly old bread cut with some asiago cheese for the topping and like a previous reviewer suggested I added about a half a can of sweet corn.

Italian Ribs and Rice

I added some sweet peas and cut the water with some beef stock. I think it helped.
