Grilled Italian Burgers

These burgers are very good. However, I found them to be more of a Greek burger than an Italian one, what with the addition of feta cheese. I would make these for friends. I am making them next week for my company get together.

Easy Vodka Sauce

Absolutely wonderful! My husband woke up Saturday morning and announced "I want sausage and pepper rustica with a vodka sauce." This sauce perfected his request. I stuck to the recipe, save for adding basil and oregano. We had plenty of leftovers, and this sauce is perfect for that too-hot or cold! Thank you!

Broiled Tilapia Parmesan

So good, and SO EASY!! I didn't have celery salt, so I didn't use it, and instead used garlic powder and dill (because we use dill on practically every fresh fish we make). Also used low fat mayo. An added bonus? Dinner for 2 cost less than $6 (because I had to buy the fish and a lemon and everything else was on hand). Thanks!

Che Guevara's Ceviche

Yum. Very lime-y but just enough fish-y. The local fish market guy recommended grouper since they didn't have orange roughy and it was awesome. I left out the avocado to avoid the fat, but did add tiny salad shrimp (the kind that come in a bag frozen). Essentially, this is pico de gallo, so I left that out as well. Marinated the fish overnight (about 20 hours), then added the rest of the ingredients and let sit for about 3 more hours. I think it tasted fine and I didn't notice a difference between the 3 hours and the leftovers the next day. I don't know how this could possibly be 4 servings. We made this as an appetizer and it fed 6 people, with 4 servings left over.

Slow Cooker London Broil

Chicken Breast Stuffed with Spinach Blue Cheese and Bacon

This was great, with some modifications - I don't like bacon, so I left that out. I used 3/4 cup bleu cheese and 1/4 cup ricotta (so it was creamier). I also added 1 tablespoon of italian seasoning and a few shakes of garlic powder to the mix. Also added garlic powder to the flour mixture, and surrounded the chicken with the leftover spinach mixture, and added 1/2 can of diced tomoatoes. It was fantastic!

Jalapeno Popper Spread

Fantastic recipe! I serve this every year for opening day of football season and preprint copies for all of those who I know are going to ask for the recipe. I doubl the jalapenos, add chopped fresh jalapenos to the top for garnish and sprinkle with bread crumbs as well. I also bake it for 15 minutes at 350 instead of microwaving it. I serve it with bagel chips.

Chocolate Fudge Buttercream Frosting

My husband gave this a ten, and he never gives tens! For the fudge topping, I used the Hot Fudge Sauce recipe from this site. Its very delicious. Will use this as my chocolate frosting recipe from now on. :-)

Grandma's Corn Pudding

Definitely the old fashioned country recipe for corn pudding. I substituted Splenda for the sugar, and I did add a teaspoon of vanilla and a sprinkle of cinnamon on top. All of my friends at the holiday cookout raved about the recipe, and I've had four or five recipe requests already.
