Cucumber-Avocado Salad Dressing

I thought this dressing was pretty good. I didn't think it was too thick but it did need something. I might put in more garlic next time. The cucumber taste was great and the cilantro really complimented it.

Crab Cakes III

I didn't rate this high because I didnt think it was great. It was good but I had to adjust the sauce, it was too oily and so I added more lime and cilantro. It could be because I had changed the recipe to yield 5 servings and some recipes don't adjust well. I would be interested in if any one else had the same result.

Coconut Tilapia with Apricot Dipping Sauce

This was pretty good. I baked instead of fried and next time I will drizzle a little oil on the top. The fish was moist but the coconut was a little dry.
